Cauliflower Bacon Medley

Paleo Cauliflower Bacon MedleyCauliflower Bacon Medley makes a delicious addition to any buffet. If you do not like cauliflower, you might change your mind after tasting this simple side dish. I have never seen a whole head of cauliflower disappear so quickly. Bacon is a great way to dress up cauliflower or just about anything for that matter.

Ingredients for Cauliflower Bacon Medley

1 head of cauliflower, cut into 1 ½-inch florets 

6 strips of uncured bacon

½ cup almond flour/meal (We have used Bob’s Red Mill Almond Meal Flour, Kirkland, and Simple Truth Organic)

4 green onions, sliced

1 teaspoon dried dill weed

½ teaspoon sea salt

Dash of pepper

Instructions for Cauliflower Bacon Medley

Steam cauliflower florets until crisp-tender (about ten minutes).

Meanwhile, in a large skillet or griddle, cook bacon strips until crisp. Remove bacon to a cutting board and reserve drippings. Crumble or cut bacon into one-inch pieces, set aside.

Toss bacon and drippings with almond meal/flour, until well coated.

Layer steamed cauliflower in the bottom of a 2-quart casserole dish, sprinkle with salt and pepper, top with bacon almond flour/meal mixture, and green onions. Sprinkle with dill weed.

Bake covered at 400°F for ten minutes and uncovered for five more minutes. Enjoy!
