Chili Lime Chicken

Paleo Chili Lime ChickenI’m always looking for a way to spice up chicken recipes.  Chili Lime Chicken, oh so good.  This one reminds me of good Mexican food. Great chili flavor with more than a hint of lime. My family eats it up.

Ingredients for Chili Lime Chicken

4-5 pounds chicken thighs and legs

2 tablespoons olive oil

Juice of 2 limes (about 4 tablespoons)

2 teaspoons chili powder

2 teaspoons ground cumin

1 1/2 teaspoons salt

Instructions for Chili Lime Chicken

Preheat oven to 375 degrees F. Combine olive oil, lime juice, chili powder, cumin, and salt in a small bowl. Place chicken in a baking dish, skin side up.  

Brush chicken with the chili-lime seasoning mixture. Cover and place in a 375 degree oven for 25 to 30 minutes.

Chili Lime Chicken BakedRemove cover, brush with chili-lime seasoning mixture again and bake uncovered for an additional 15 to 20 minutes or until golden brown and internal temperature reaches at least 165 degrees F. Enjoy! 

Tip: This Chili lime seasoning mixture can also be used on chicken breasts, boneless chicken thighs, or tenders. It is especially great on wings. Cooking times will vary.

    This simple chili lime recipe for chicken is just what I have been looking for! I am guessing we can put it over rice if we aren't full paleo... I think I will make enough to put some in enchiladas for the next day as well. I will get back on full paleo after the holidays. I hope it comes out good, wish me luck!

      I have made it with rice before, as not everyone in my family eats Paleo. The juices from the bottom of the pan flavors the rice wonderfully. The enchiladas sound delicious!
