Ingredients for Chipotle Lime Sweet Potato Fries

3 large sweet potatoes, cut into 1/2″ fries

1/4 cup olive oil or melted coconut oil (your flavor preference)

1 tablespoon lime juice

1 tablespoon Herb Chipotle Spice Mix

Instructions for Chipotle Lime Sweet Potato Fries

In a small bowl, mix together olive oil or coconut oil, lime juice, and Herb Chipotle Spice Mix.

Place sweet potatoes in a 13″ by 9″ baking dish, pour mixture over sweet potatoes and toss together to coat well.

Cover with foil and bake at 400° F for 20 minutes, uncover and bake for an additional 20-25 minutes or until sweet potatoes are tender. Enjoy!
