Double Chocolate Coconut Milk Ice Cream

Paleo Double Chocolate Chip Ice CreamChocolate Coconut Milk Ice Cream…OMGoodness! This is deliciousness!  I love my Homemade Vanilla Coconut Ice Cream, but I am a chocolate lover. I just had to! I started to make just plain chocolate, but I went even farther and added chocolate chips. Yum!
The chocolate chips are totally optional. I use a brand that is gluten, dairy, nut, and soy free. Unfortunately…it’s not sugar-free.

Ingredients for Double Chocolate Coconut Milk Ice Cream

2 cups unsweetened full fat coconut milk 

½ cup pure unrefined organic coconut sugar (This gives your ice cream a caramelized flavor.)

1 teaspoon pure vanilla extract

Dash of sea salt

1/2 cup unsweetened cocoa powder

1/4 cup gluten free, nut free, dairy free mini chocolate chips 

Instructions for Double Chocolate Coconut Milk Ice Cream

Chocolate Chocolate Chip Coconut Milk Ice CreamPour all ingredients, except the mini chocolate chips into a quart jar, replace lid tightly, and shake until sugar is dissolved. I have the kids pass the jar around, taking turns shaking it.
Chocolate Coconut Milk Ice Cream in freezerPour into a 1 quart or larger ice cream freezer  and allow ice cream to churn until it starts to stiffen, but is still mixing. While the ice cream machine is still running, add the 1/4 cup mini chocolate chips and freeze until stiff. This should take about 30-40 minutes total, depending on your ice cream freezer.  Enjoy!

Tip: This recipe is best when served immediately. You can also put it in a chilled bowl in the freezer for later, but it won’t be as soft.

  2. ½ cup pure coconut sugar (This gives your ice cream a caramelized flavor.)

  6. 1/4 cup mini chocolate chips (I used Enjoy Life Semi-Sweet Chocolate Mini Chips)

      Hello Stephanie, thank you for stopping by! Chocolate is my favorite too...and ice cream. I can't do dairy, so I had to get creative. So good!
