Easy Scrambled Egg Casserole

Easy Scrambled Egg Casserole There are some recipes that are a go-to for Holiday breakfasts. This is one of them. I make two of these Scrambled Egg Casserole recipes ahead of time for Easter and Christmas mornings. Wake up, pop it in the oven and enjoy your time with the kids while it bakes. Of course, it is delicious other times of the year too.

Ingredients for Easy Scrambled Egg Casserole

Clarified butter or coconut oil for greasing casserole dish

1 cup chopped green bell peppers

1 cup sliced green onion

1-2 tablespoons clarified butter

18 beaten eggs

3 tablespoons diced pimento, drained

1/8 teaspoon pepper

1 teaspoon sea salt

You can add Alfresco Country-Style Chicken Sausage (chopped into  ½-inch pieces) or your favorite Paleo sausage to this recipe.

Instructions for Easy Scrambled Egg Casserole

Preheat oven to 350° F. Grease the bottom if a 2-quart casserole dish with coconut oil or clarified butter.

In a large skillet, sauté onions and green bell peppers in one tablespoon of the clarified butter until tender.  Add eggs and cook over medium heat. 

Do not stir until the mixture begins to set on the bottom.  Lift from eggs from the bottom, turning them on to the uncooked portion, until just set.

Fold in diced pimentos, salt, and pepper. Transfer partially cooked egg mixture to a greased 2-quart casserole dish.

Bake at 350° F for 15 to 20 minutes or until hot.  Serve with bacon or sausage for breakfast or even dinner. Enjoy! Serves about 8.
