Fresh Country Coleslaw

Paleo Fresh Country ColeslawAs a kid, coleslaw was a staple at all summer picnics and everyone had their own recipe. It’s a classic! Fresh Country Coleslaw has become our new summer classic. The addition of lemon juice, red onions and apples make it sweet and refreshing.

Ingredients for Fresh Country Coleslaw

1- 14 ounce bag of coleslaw mix or ½ white or green cabbage, chopped slaw style

½ cup shredded carrots

1 small red onion, chopped

3 medium crisp red apples, washed, cored, and chopped (I like Honeycrisp, Gala, or Fuji)

Juice of 3 lemons

1/3 cup Paleo mayonnaise (Add more, if you like.)

1 tablespoon stone ground mustard (I use Best Boy – (not an affiliate link)

1 ½ teaspoons chopped fresh parsley

 Sea salt (I use about ½ teaspoon.) and freshly ground black pepper (I use about ¼ teaspoon.) to taste

Instructions for Fresh Country Coleslaw

In a medium bowl, combine coleslaw mix (cabbage), carrots, onion, and apples. Fold in lemon juice, mayonnaise, and mustard. Add salt, pepper, and parsley and stir until all ingredients are well combined. 

Refrigerate for about an hour to allow the flavors to blend. Enjoy!
