Homemade salsa, fresh from the garden!
Want to know how to make great homemade Paleo salsa? Grow your own fresh ingredients or buy them from your local farmers market. We grow most of the salsa ingredients in our vegetable garden. Every summer, we preserve dozens of jars of salsa to enjoy throughout the rest of year and give away as gifts. It is a great addition to fajitas, tacos, salads, and even over meatloaf.
This is my favorite salsa recipe. It’s easy to make and can be eaten hot or cold.
Ingredients for Garden Fresh Paleo Salsa
12 cups tomatoes, peeled and diced
1/3 cup jalapeños, minced
2 cups green bell pepper,diced
3-4 cups onions, chopped
1/3 cup pure coconut sugar
1 cup apple cider vinegar
1 tablespoon salt
5 garlic cloves, minced
1 large can (12 ounces) tomato paste
Quick tip:
When handling jalapeño peppers, wear rubber gloves to protect your hands. For less spicy salsa, seed the jalapeños before chopping or use less.

Instructions for Garden Fresh Paleo Salsa
Mix all together in a 6 1/2 quart dutch oven or stock pot, bring to a boil. Simmer for 30 minutes.
At this point you can allow it to cool a little or completely (or refrigerate) and eat it warm or cold with tortilla chips, or you could can it for later use.
