Garlic Italian Chicken

 Garlic Italian ChickenI have learned very quickly how to adapt. I created Italian Chicken and many of my other rubbed, marinated, seasoned chicken and other meats because I was tired of plain. Now my diet consists of more flavor than ever before.

One food I missed the most after starting to eat strict Paleo is Italian. I loved (still would) pasta and bread with tomatoes, garlic, and Italian seasonings.

Ingredients for Garlic Italian Chicken

4-5 pounds chicken thighs and legs

3 tablespoons olive oil

1 tablespoon Garlic Italian Dressing Mix

Instructions for Garlic Italian Chicken

Preheat oven to 375 degrees F. Combine olive oil and Garlic Italian Dressing Mix in a small bowl. Place chicken in a baking dish, skin side up.  

Brush chicken with the Italian seasoning mixture and sprinkle with salt and pepper as desired. Cover and place in a 375° F oven for 25 to 30 minutes.

Remove cover, brush with Italian seasoning mixture again and bake uncovered for an additional 15 to 20 minutes or until golden brown and internal temperature reaches at least 165° F. Enjoy! 

Tip: This Italian seasoning mixture can also be used on chicken breasts, boneless chicken thighs, or tenders. Cooking times will vary.
