Herb Roasted Red Potatoes

Paleo Herb Roasted Red Potatoes Potatoes are a fun food to work with. They take on nearly any flavor you choose to put with them. I love to add herbs and spices to them to create new sides my family will enjoy, like Herb Roasted Red Potatoes. I hope your family enjoys them too!

Ingredients for Herb Roasted Red Potatoes

3 pounds small red potatoes, cubed

3 tablespoons clarified butter, melted

1 tablespoon Italian seasoning

1 teaspoon sweet paprika

1 teaspoon sea salt

1/4 teaspoon ground black pepper

5 garlic cloves, minced

1 pinch of cayenne pepper (I wouldn’t actually “pinch” this, as you don’t want it on your fingers. I would use a spoon to get this out of the container.)

Instructions for Herb Roasted Red Potatoes

Place cubed red potatoes in a bowl with the melted clarified butter and Italian seasoning, paprika, sea salt, black pepper, garlic cloves, and cayenne pepper; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan or shallow 3-quart baking dish and spread out to a single layer.

Roast in a 400° oven for 35-45 minutes until browned and crisp. Turn twice with a spatula during cooking in order to ensure even browning. Remove potatoes from the oven and serve warm/hot.
