Paleo Carrot Fries

Paleo Carrot Fries, make a delicious Paleo side dish.“Carrot Fries!” Ever heard of them? That’s what my kids said when they saw these. My daughter, Líadan, came up with this delicious carrot side-dish and my family loved it. They are super simple to make, gluten free, vegan, and Paleo. I cannot guarantee that your kids will eat their veggies, but these Paleo Carrot Fries might help.

Ingredients for Paleo Carrot Fries

1 pound baby carrots, sliced in half long-wise (or a 1 pound bag of pre-sliced carrot sticks)

2-3 tablespoons cold pressed extra virgin olive oil

2 tablespoons Garlic Italian Dressing Mix

Salt and Pepper to taste

Instructions for Paleo Carrot Fries 

Preheat oven to 375° F. Place sliced carrots in a 13″ by 9″ baking dish, drizzle with olive oil, and sprinkle with dressing mix, salt, and pepper. Toss to coat. Cover with foil, and roast your carrot fries for 20 minutes covered, uncover and roast an additional 20-40 minutes, depending on your desired crispness. Enjoy!
