Pumpkin Spice Smoothie

Pumpkin SmoothieI love the flavor of pumpkin. This Pumpkin Smoothie is delicious in the fall, but a great refreshment any time of the year.

We grow our own pumpkins or buy them from our local farmers market and cook them down for fresh pumpkin puree (Freeze it!). I also stock up on canned pumpkin around Thanksgiving time (It’s cheap at a time of abundance.) and keep it on my pantry shelf until I want to make a smoothie or other pumpkin treats.

Ingredients for Pumpkin Spice Smoothie

1 cup Organic Unsweetened Coconut Milk or Organic Coconut Cream (No guar gum or other extra ingredients.)

1/2 teaspoon pure vanilla extract

1 pinch of sea salt

1 tablespoon pure maple syrup

1/2 teaspoon cinnamon

1/2 teaspoon Pumpkin Pie Spice

1/2 cup pumpkin puree

1 cup ice cubes

Instructions for Pumpkin Spice Smoothie

Combine all ingredients in a blender (I use a Ninja-Nutra Ninja Cup.) and blend until well-combined, turning off blender to scrape the sides as needed.

Pour into your favorite glass and enjoy! I like to drink mine through a straw, it seems tastier that way.

    This pumpkin pie smoothie looks so refreshing. I also like to drink my smoothies out of a straw as well. Something about drinking from a straw makes it so much more enjoyable.

    I start every day with a smoothie made with coconut or almond milk and fruit but have never tried it with pumpkin. Sounds delicious!

    That sounds like a delicious smoothie. I always make my own pumpkin puree because in Norway there is actually zero canned pumpkin! Doesn't bother me, as I have plenty of space for it in my freezer :)

      Thank you! Oh yes, I love making my own pumpkin puree. I have about 12 pie pumpkins here waiting to be processed. Too bad you don't have it canned, it's so convenient, but frozen is good too.

    I love pumpkin but not truly a fan of pumpkin spice so I would switch up the spice a bit but regardless I could easily fall in love with pumpkin smoothie which I am yet to try.
