I know, I tend to roast a lot of vegetables with garlic. Roasted Garlic Asparagus is probably my all time favorite…unless you count broccoli. Make it with or without the lemon juice, both are delicious.
As a kid, my mom would add mustard to our asparagus, broccoli, cauliflower, or spinach to add a little zesty flavor and take away the bitterness and to get us to actually eat the stuff. She says that’s what her mom used to do. Adding lemon juice to this dish does the very same thing. I like it.
Ingredients for Roasted Garlic Asparagus
1 pound fresh asparagus
1-2 tablespoons olive oil
4 garlic cloves, minced
Juice of 1/2 lemon (optional)
Salt and pepper (to taste)

Instructions for Roasted Garlic Asparagus
Preheat oven to 425 degrees F. Wash asparagus spears and cut off any tough ends (This is usually the bottom 1-2 inches of the spear).
Arrange the asparagus spears in a small baking dish (8-9 inch). Sprinkle with garlic, drizzle with olive oil and lemon juice (if desired).
Roast for 10 to 15 minutes or until asparagus spears are lightly browned and tender. Salt and pepper to taste.
Tip: Thicker asparagus spears are better for roasting.
