Zesty Garlic Salmon

Paleo Zesty Garlic Salmon Zesty Garlic Salmon is a dish that has an appealing simplicity to it. This recipe is a quick fix and lemon, garlic, and dill are perfect flavorings for salmon and other fish.

 Salmon is a popular fish in the U.S. and available pretty much everywhere.  I always try to buy fresh, wild caught fish with no dyes or preservatives. If fresh is not available, I go for frozen with the same standards. 

Ingredients for Zesty Garlic Salmon

4 salmon fillets (4-5 ounces each)

2 large garlic cloves, minced

2 tablespoons clarified butter, melted

Zest of one lemon

1/2 teaspoon sea salt

1/2 teaspoon dried dill

Dash of ground black pepper

Instructions for Zesty Garlic Salmon

In a small bowl, combine melted clarified butter, lemon zest, dill, salt, and pepper; stir until well combined, set aside. 

Paleo Zesty Garlic SalmonPlace salmon in a parchment lined baking pan, skin side down. Using a pastry brush, coat salmon with butter mixture (be sure to pick up bits of garlic and lemon zest) and spread evenly over the top of the salmon.

Bake on the top rack of a 400° F oven for 10-12 minutes or until salmon is cooked through and flakes easily in the middle with a fork. Enjoy!
