Chocolate Chip Banana Cake

Paleo Chocolate Chip Banana CakeThis is my go-to recipe for dessert. When others are munching on their chocolate cake, Chocolate Chip Banana Cake gets rid of my jealousy. So good!

Hint: If you are on the path of weight loss, don’t even look at the picture. 

Ingredients for Chocolate Chip Banana Cake

3 cups almond meal/flour (I use Bob’s Red Mill Almond Meal/Flour.)

1/2 teaspoon sea salt

1 teaspoon baking soda

1/4 cup melted coconut oil

1/4 cup pure maple syrup

3 large free range eggs

1 tablespoon pure vanilla extract

1 1/4 cup chocolate chip minis (I use Enjoy Life Semi-Sweet Chocolate Mini Chips or Chunks.)

1 cup ripe mashed bananas (2-3 bananas)

Instructions for Chocolate Chip Banana Cake

Preheat your oven to 350 degrees F. Grease an eight inch baking dish with coconut oil and dust with almond meal/flour.

Combine almond meal/flour, sea salt, and baking soda in a large mixing bowl. Whisk together coconut oil, maple syrup, eggs, and vanilla in a small mixing bowl.

Gently fold wet mixture into dry ingredients, until thoroughly combined. Stir in bananas, then chocolate chips. Pour into your greased and floured cake pan. Bake at 350 Degrees F for 35 to 45 minutes or until top is golden brown and toothpick inserted into the middle comes out dry.

Allow to cool and serve. I like to eat it with my Double Chocolate Chip Coconut Milk Ice Cream. Enjoy!

Fun tip:

For a swirled look, about 10 minutes into baking, remove from oven and run a butter knife back and forth in an “S” shape through the batter.
