Crispy Paleo Fried Chicken

Paleo Fried Chicken Ahhh…Simple Crispy Paleo Fried Chicken, my husband’s favorite. His favorite part (and mine) is the crispy skin. I think he could eat it every day! It’s a classic around here. It’s crispy on the outside and juicy on the inside,

Ingredients for Crispy Paleo Fried Chicken

3-4 pound chicken, cut in pieces for frying

Salt and pepper to taste or season with other seasonings (if desired): I have used poultry seasonings, my Homemade Seasoned Salt or Old Bay Seasoningin the past.

1/2 cup of coconut oil, or lard (your preference)

Instructions for Crispy Paleo Fried Chicken

Wash chicken and blot dry with paper towels and season as desired.

Heat oil in a large skillet over medium heat (425 degrees).

Place chicken in skillet, skin side down. Tilt lid and let fry for about 15 minutes.

Turn and fry for another 10 minutes (or until internal temperatures reach 165 degrees F and juices run clear). Enjoy!
