Before going Paleo, tacos was a go-to easy meal for my family. Paleo Taco Skillet is a great replacement. I serve this mix on Paleo tortillas or over lettuce, garnished with diced avocado or guacamole and black olives.
Ingredients for Easy Paleo Taco Skillet
1 1/2 pound ground beef (Organic, grass-fed is preferred)
1 large yellow onion, diced
1 large green bell pepper, diced
1 large red, orange, or yellow bell pepper, diced
1 (4 ounce) can green chiles
1/4 cup Taco Seasoning Mix
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cup fresh baby spinach, chopped (for good health)
Garnish
Diced avocado or guacamole and sliced black olives

Instructions for Easy Paleo Taco Skillet
Be sure you have made your Taco Seasoning Mix.
Brown ground beef, drain fat, if necessary; add onions and peppers and cook medium heat until veggies are translucent.
Add green chiles, diced tomatoes, spinach, and Taco Seasoning Mix.
Simmer until liquid is down to about ½ cup and flavors are combined (add liquid, if needed).
Serve over a bed of lettuce or greens and garnish with chopped avocado or guacamole and sliced black olives (if desired).
