Ingredients for Zesty Lemon Thyme Chicken
4-5 pounds of chicken thighs and legs
4 tablespoons olive oil
1 tablespoon minced lemon zest
1 tablespoon lemon juice
1 tablespoon dried thyme leaves
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
Instructions for Zesty Lemon Thyme Chicken
Preheat oven to 375 degrees F. Combine olive oil, lemon zest, lemon juice, thyme leaves, sea salt, and black pepper in a small bowl. Place chicken in a baking dish, skin side up.
Brush chicken with the lemon thyme seasoning mixture. Cover and place in a 375 degree oven for 25 to 30 minutes.
Remove cover, brush with lemon thyme seasoning mixture again and bake uncovered for an additional 15 to 20 minutes or until golden brown and internal temperature reaches at least 165 degrees F. Enjoy!
Tip: This Lemon thyme seasoning mixture can also be used on chicken breasts, boneless chicken thighs, or tenders. Cooking times will vary.
